When I first saw Jeff Mauro’s recipe for Chicken Shawarma I thought of Marvel and The Avengers. There have been brief mentions of shawarma in some relatively recent Marvel movies, cartoons, and comics. For this reason alone I decided to make chicken shawarma as soon as possible. I slightly modified the recipe by using chicken breast instead of thighs and smoked paprika instead of normal paprika.
I was afraid the smoked paprika might be a little obnoxious but Gar loves it and it turned out that it worked extremely well. I marinated my chicken with the rest of the ingredients for at least 30 min. then put the tenderloins on bamboo skewers that had been soaking in water for the same amount of time and grilled them. Since I had already made an entire falafel meal that day, we ate a little bit of the chicken then put it in the fridge to make cold wraps the next day. I picked up some spinach lavash, which is basically a flatbread made with some spinach. I spread the Tahini Yogurt Sauce over all of the lavash, then I put the chopped up chicken shawarma, romaine lettuce, and Tomato Cucumber Relish on one side and rolled it up not worrying about having open ends. These wraps were so good, I am in love.
6 chicken tenderloins, uncooked
3 ½ tablespoons olive oil
1 garlic clove, grated
1 ½ teaspoons smoked paprika
¼ teaspoon ground allspice
¼ teaspoon chilli powder
Kosher salt, I think I used about 3 healthy pinches… determining salt addition is a spiritual, intuitive act of sorts that we all must do for ourselves
